RECIPE // spicy dumpling soup with noodles and veggies

Okay, many soup “hater” is a big word, but if you watched my A SUSTAINABLE DAY IN MY LIFE // zero waste flu remedies *SOS I am sick* video, you will know that I don’t have a preference for soup. Actually, and this seemed to confuse some of my subscribers, soups make me sad, haha, but there is one type of soup that has the opposite effect and that is a dumpling/noodle soup, let’s make it.

Ingredients for soup base:

  • 1 tsp of minced ginger
  • 1 tsp of minced garlic
  • 1-2 tsps of ground chili/garlic paste
  • 2-3 tsps sesame oil
  • Sweet chili oil
  • Veggie broth
  • 1-2 cups of water
  • 1 carrot
  • 2-3 finely chopped mushrooms
  • ½ a cup of broccoli
  • Noodles of your choice
  • Sesame seeds for toppings
  • Spring onion for toppings

I love adding dumplings to my soup, you can ofc buy them premade, or you can check out my vegan dumpling recipe here

You can also add more veggies like peas, edamame , onions etc, or use tofu to add more protein

How to:

  • Cook your noodles, strain them and let them rest until your soup is ready
  • Pour some sesame oil on a hot pan, fry the mushrooms, and mix minced ginger and garlic
  • Add your chili paste, sweet chili sauce,  and soy sauce
  • When well-combined, add your veggie broth and water
  • Now add your noodles while your soup is boiling
  • Place your veggies on your bowl and once the soup is finished pour it over the veggies
  • Drizzle spring onion and sesame seeds on top
  • Add your dumplings into the soup or eat them as a side
