Zero Waste Shopping in Lidl // Recipes

Hello everyone! I recently posed the 3rd video in the “gittemary tried to shop zero waste in a normal supermarket” series. I went to Lidl to see what I could find, and although it does not look like a lot the food I made was so tasty. Like in the case of the other videos, I want to publish the recipes, in case you need inspiration for plant-based cooking.

Couscous salad:

  • 1 deciliters of couscous
  • ½ a cucumber
  • 1 big tomato
  • 1 medium-sized sweet potato
  • 1 red pepper
  • 1 tbsp oregano
  • 1 tbsp paprika
  • 2 tsps turmeric
  • Salt and pepper
  • Oil/vegan butter

Cut the sweet potato into small cubes and fry them on a warm skillet in oil, paprika and salt and pepper until the sweet potato is soft, expect 10-15 minutes. At the same time, take a pot and fill it ¼ with water. Bring the water to a boil, then add the couscous. Let it cook until it’s soft, expect 5-7 minutes. Remove the excess water and add turmeric, salt, pepper and a bit of oil. Stir it around the dry warm pot, however without direct heat. The last water should disappear and you can transfer it a cold bowl, along with chopped tomatoes, peppers and cucumber. Top it off with the sweet potato and enjoy it.  

Bruschetta:

  • Baguette
  • 1 tomato
  • Oil
  • Oregano
  • Salt and pepper

Preheat the oven to 200 degrees Celsius. Cut the appropriate amount of bread slices from the baguette. Brush the upwards facing side of the slices with oil. Finely chop your tomatoes and add them on top. Then add oregano and salt and pepper to taste. You can also add garlic, it is actually encouraged, I found no package free garlic in Lidl, which is why I did not do it.
