3 vegan burgers // inspiration for lunch or dinner

Hello everybody! Two weeks ago, Simone, who is the wonderful woman behind the blog SimoneJespersen.dk, and I decided to get together and make some delicious vegan burgers. These bad boys are all packed with nutrients and goodness. The video is not so much meant to be a step-by-step recipe, as much as it is simply inspiration. I want to show you how easy it is to create vegan food that tastes good and is also healthy.

If you are interested in some of the specific ingredients from the burgers, here is a quick run through. The falafel: I have previously made several falafel recipes on my platforms. The potatoes: I had some leftover boiled potatoes that I wanted to use in these burgers. I got them really crispy by frying them on a hot skillet in vegan butter for 3 minutes on each side. I added salt, pepper and parsley to taste and let them drip off on a towel. The red pesto: This was actually bought, I was so lucky to find a vegan option in glass. However, we did add more sundried tomatoes to it, just to add some more flavour. The vegan cream cheese: We used the violife cream cheese, however, we added tons of dill, lemon juice, salt and pepper to make it a bit more interesting.
