Last week, all I wanted was a piece of cake before bed, and the craving wouldn’t go away. “If you can’t beat them, join them” has never tasted this good. My partner said that cake sounded nice, but that he unfortunately “wasn’t able to magically make cake appear this late at night”. Well, watch me do magic. 30 minutes later, I had cake in bed.
- 100g plantbased butter
- 150 g silken tofu / alternatives: egg replacement, or 1 dl apple sauce
- 3 dl sugar
- 1,5 dl wheat flour
- 3 tbsps cocoa powder
- 1 tbsps vanilla powder
- 2 tsps baking powder
- A pinch of salt
- 75 grams dark chocolate, chopped
Melt the butter. Preheat the oven to 180 degrees C, use the fan option. Combine silken tofu and sugar with a whisk or in a food processor until smooth. Then add the melted butter.
In a separate bowl combine the dry ingredients and once mixed, add them to the wet ingredients and mix well. Chop some dark chocolate last and mix that in with the batter.
Place the batter in a lined baking tray and bake for approximately 25 minutes. Let the cake cool for a bit before having a taste)
(I honestly think the cake was way better the next day, after spending a night in the fridge, but sometimes you just can’t wait)
