Spicy Vegan Poké Bowl // RECIPE

Hello everyone! I am making a lot of food that fits in bowls right now, I don’t know what this lockdown is during to me, but it has rendered my normal flat plates obsolete, lol. I have also been super horrible at eating my greens, which is normally not a problem, but because my farmers market is closed I have been hesitating when buying produce at the grocery store. But I cannot live on bread and paste forever. I think a poke bowl is a great way of eating a lot of veggies without even knowing it. This is also a great dish to serve to friends and family, especially if you know any picky eaters. I serve all the ingredients in small individual bowls and then everyone put their own bowls together.

Ingredients: You can put anything you want in this dish, no limits, empty dat fridge, and avoid dat food waste. But here are the ingredients I chose to include: baby spinach, lettuce, cold rice, cold rice noodles, pickled red onion, garlic sprouts, bean sprouts, edamame, grated carrot, LikeMeat vegan nuggets, seaweed caviar, and green peppers. I also made a spicy peanut sauce to add on top which, in my opinion, pulls the whole recipe together.

Spicy peanut sauce: take 4 tablespoons of coconut milk and 2 tablespoons of peanut butter and mix. The peanut butter can be mixed into the coconut milk with a fork, just press and combine. Then add 2 teaspoons of red curry paste and 2 teaspoons of chili paste and a good dash of soy sauce. Mix again. This is a sauce that’s great on its own, but I also added 2 tablespoons of sweet and sour sauce to add some tanginess to the sauce, and a good dash of hoisin as well. Mix well, you can keep adding the flavour you want to regulate sweetness, nuttiness or spiciness until it suits you perfectly.  

What you’ll need: Coconut milk // peanut butter // red curry paste // chili paste // soy sauce // sweet & sour sauce // hoisin
