BBQ Cauliflower Summer Bowl // zero waste recipe

Hello everyone! Do you want a dinner plate (or should I say a dinner bowl) that is satisfying, filling, and delicious, aaaand without any rare or hard-to-find ingredients or substitutes? The first and most important step is preparing the cauliflower. Take a small/medium-sized cauliflower and pick apart the bouquets from the stem. Btw save the stem for soup, it is divine, and such a waste to throw it out. Make the BBQ sauce, I’ve listed my go-to recipe here. Once the cauliflower is evenly coated, place them on a baking tray and cook them in the oven at 180 degrees C for 45 minutes.

I chose to cook mine on the pan for 5 minutes afterward, and here I added some left-over BBQ sauce and some green beans as well. Topped it off with chopped spring onion and parsley.

BBQ sauce (the good thing is, if you don’t have these exact ingredients, just substitute for what is available to you and seems delicious, there is no wrong way)

3 tbsps of ketchup or tomato paste / 3 tbsps of BBQ marinade, or any random chili sauce / 2 tbsps of brown sugar / 1 tsp of garlic powder / 1 tsp of onion powder / 2 tsp of smoked paprika / 1 tsp of chili flakes / A dash of salt, pepper and soy sauce

With the cauliflower, I had a serving of rice, some fresh corn, and a salad made with cabbage and red pepper. Lastly, I drizzled the whole dish with a spicy peanut sauce. The peanut sauce is made by taking 2 tsp of peanut butter, 1 tsp of tahini, 2 tsp of plant milk, salt, pepper, and 1 tsp of BBQ sauces and making it together. Then pour it on top of your bowl.
